This is a old favorite around my house. After years of cooking and baking for my very allergic son, Caleb, I still resurrect my old “Cooking for Caleb” collection of recipes for those friends of mine who are entering the world of gluten free foods.
- 1 cup rice flour
- 1 T. baking powder
- 1/2 t. salt
- 1/4 c butter
- 1/4 c. sugar
- 2 eggs, separated
- 1/2 cup milk
- 1 ripe banana, mashed
- nuts of choice, optional
- Sift dry ingredients together; set aside.
- Cream butter
- Add sugar
- Beat until well blended
- Add flour mixture alternately with milk, beating after each addition
- Add mashed banana
- Beat egg whites until stiff peaks form
- Fold batter into egg whites
- Spoon into a greased loaf pan
- Bake in a preheated 325 degree oven for 45 minutes
Cool before slicing. Makes 1 loaf.
